This easy one pan meal is wonderful for a busy night. It’s also great for camping or anytime you want to make a large dish. Use any vegetables you like .

Ingredients

Scale
  • 12 oz smoked sausage, sliced

  • 1 zucchini

  • 1 red onion

  • 1 cup carrots

  • 1 cup broccoli

  • 1 bell pepper

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • Salt and pepper to taste

  • Optional: smoked paprika

Instructions

  • Preheat oven to 425°F (220°C)

  • Chop all vegetables and slice sausage

  • Toss with oil and seasonings

  • Spread evenly on a baking sheet

  • Roast 25–30 mins, flip halfway

 

  • Optional: Broil 2–3 mins for extra crisp

Notes

  • Use fully cooked sausage

  • Broil for crispier texture
