Ingredients

  • 4 large turkey wings

  • 2 tablespoons olive oil

  • 1 tablespoon smoked paprika

  • 1 tablespoon garlic powder

  • 1 tablespoon onion powder

  • 1 teaspoon cayenne pepper (optional)

  • 1 tablespoon kosher salt

  • 1 teaspoon black pepper

  • 1 teaspoon dried thyme

  • ½ cup chicken broth or apple juice (for spritzing)

Instructions

  • Prep the Wings: Rinse turkey wings, pat dry, and coat evenly in olive oil.

  • Season: Mix all dry spices and rub thoroughly over wings. Let sit for 30 minutes or overnight.

  • Set Up Smoker: Preheat smoker to 250°F using hickory or applewood.

  • Smoke: Place wings on smoker rack and spritz with broth every hour.

  • Cook Time: Smoke for 2.5 to 3 hours or until internal temperature reaches 165°F.

  • Finish: Optionally broil for 3–5 minutes for crisp skin.

 

  • Rest & Serve: Let rest for 10 minutes before serving.

Notes

  • Removing the skin reduces fat and sodium

  • For spicier flavor, double the cayenne pepper
