Ingredients
4 large turkey wings
2 tablespoons olive oil
1 tablespoon smoked paprika
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon cayenne pepper (optional)
1 tablespoon kosher salt
1 teaspoon black pepper
1 teaspoon dried thyme
½ cup chicken broth or apple juice (for spritzing)
Instructions
Prep the Wings: Rinse turkey wings, pat dry, and coat evenly in olive oil.
Season: Mix all dry spices and rub thoroughly over wings. Let sit for 30 minutes or overnight.
Set Up Smoker: Preheat smoker to 250°F using hickory or applewood.
Smoke: Place wings on smoker rack and spritz with broth every hour.
Cook Time: Smoke for 2.5 to 3 hours or until internal temperature reaches 165°F.
Finish: Optionally broil for 3–5 minutes for crisp skin.
Rest & Serve: Let rest for 10 minutes before serving.
Notes
Removing the skin reduces fat and sodium
For spicier flavor, double the cayenne pepper
Can be made in an oven with wood chips in a foil packet
